What is cold pressed coconut oil?

Cold pressed coconut oil is exactly what its name suggests: coconut oil derived from coconut meat without any heat.

Coconut meat (flaked and usually from mature coconuts) are shredded then pressed.

The yield is what you call coconut milk, which you can also use to cook or add to smoothies.

But to make cold pressed coconut oil, you’d have to let the coconut milk sit until it divides into 3 layers: the cream on top, the coconut oil in the middle and the water at the bottom.

The coconut oil is then filtered and left to sit for days (covered, with a tiny bit of opening) to get clean cold pressed coconut oil.

What’s in cold pressed coconut oil that you can’t find in fractionated coconut oil?

And is the former better than the latter?

The answer to both boils down to one element:


As I mentioned above, cold pressed coconut oil is extracted without adding heat or any other chemicals (except water).

All the processes that coconut meat goes through are purely mechanical and natural like pressing, letting it sit for hours to naturally settle, etc.

Fractionated coconut oil, on the other hand, has gone through several processes including heating, bleaching and deodorizing.

Heating alone destroys and diminishes the nutritional content of coconuts.

In this case, the antioxidant property of coconuts is significantly reduced.

Bleaching and deodorizing also takes away flavor from coconut oil.

If you’ve noticed, fractionated coconut oil is almost odorless and flavorless but cold pressed coconut oil has that distinct nutty flavor profile and familiar coconut scent.

Another difference between cold pressed coconut oil and its fractionated sibling is that the cold pressed version is free from additives.

Fractionated coconut oil is refined oil that undergoes a refining process.

This refining process usually makes use of additives to take away impurities and “clean” the oil, so to speak.

Given the differences between both types of coconut oil, it’s clear that if health benefits are what you’re after, cold pressed coconut oil wins in so many aspects.

But that’s not to say that fractionated coconut oil is bad and useless.

Both types of oil serve a purpose and you may need one over the other depending on the situation.

For example, fractionated coconut oil is most often used for cooking stir-fries and sautés due to its high heat point and barely-there flavor.

Refined coconut oil is also very popular as carrier oil and is often used in aromatherapy.

Cold pressed coconut oil is great for baked goods and dishes in need of mild coconut flavoring.

And since this unrefined coconut oil still has most nutrients intact, it is also the go-to of many who want to reap its numerous health benefits.

Coconut oil is one heck of a superfood that’s bursting with health benefits.

I know I won’t be able to exhaust all the goodness it can give you but here are a few:

Powerful antioxidants: Because cold pressed coconut oil didn’t go thru any heat treatment, its antioxidant content is intact. 

Compare that to fractionated coconut oil which underwent heat and filtering processes, damaging coconut’s natural composition, including Vitamin E, Vitamin K and the mineral iron.

Of course, polyphenols and phenolic acids are also found in cold pressed coconut oil, making it a powerful antioxidant that can help prevent oxidative stress and fight harmful free radicals in the body.

Antimicrobial and antibacterial properties: Cold pressed coconut oil contains medium-chain fatty acids (MCFAs). 

Also known as triglycerides, they are made up of 3 immune-boosting acids, namely lauric, caprylic and capric.

These MCFAs have naturally-occurring antimicrobial and antibacterial abilities that can help your body and skin fight off infection.

Disease-fighting properties: Lauric acid, one of the medium-chain fatty acids found in cold pressed coconut oil, has been proven to effectively fight cancer on a cellular level. 

In 2013, a study found that lauric acid kills off colorectal cancer cells.

Another study in 2017 showed that the growth of breast and endometrial cancer cells can be thwarted by lauric acid.
